Almond & Blackcurrant Cake


One of my favourite cook books has to be Sarah Raven's Garden Cookbook. If I am ever stumped by what to do with a fruit or vegetable, she will have a delicious recipe to come to my rescue. 

The chapters are organized by seasons, and then by the fruit and veg that are available at that time of year. The book has been helping me out with many a veg box delivery and I made this almond & blackcurrant cake after my recent berry-picking trip. Somebody posted the recipe here. The only addition I made was scattering flaked almonds on top.

I loved the mix of tart and sweet that this cake delivered. I am sure it would also work if you used cherries or blueberries. If you make it, I recommend to eat it while it is still slightly warm!

  1. That looks so delicious! I haven't heard of that book but it sounds really interesting. I am always looking for interesting new recipes to jazz up fruits and veggies!
